NUTR 320 - Food Science Credits: (3) Instructional Method: Three hours lecture. Prerequisites: NUTR 214 , BIOL 334 , and admission to upper division NUTR; 7 credits of Chemistry (Note: Students will not receive credit for both CHEM 111 and CHEM 120 ). Basic chemical structure and nutritional value of standard foods, concepts related to the selection and preparation of standard food products, and the effects of storage, food processing and preparation on the composition of foods.
